Different goals & Gluten-free Baked Irish Colcannon

There are some rare times when the object of concentration is the same for both the brother and the sister. 

The dogged determination, the focus , the drive to achieve the goal is the same. 

Except that the goal is different – in one case it is to control the ball and steer it towards the goal post. In the other , it is to throw the ball and let it bounce until it stops ! 

And that applies even to some eating habits. So while they both love potatoes, the version they love is baked mashed potatoes. However, while for one it needs to be just good, old-fashioned mash, the other one likes a touch of different herbs and spices in it. 

So I baked this quick #Glutenfree Bake for lunch today and they loved it !

 
My version of the simple comfort food – the Irish Colcannon. One of the best ways for me to include cabbage for my son who isn’t particularly fond of it. It’s delicious, free of refined flour and can be a meal by itself.

You can choose to eat it with bread , some baked chicken or roasted veggies. It tastes excellent with all of those ! Who would have thought the humble mix of potatoes , cabbage and spring onions can be a sensational dish !

Recipe –

2 boiled potatoes, mashed well

1/2 mid sized cabbage , chopped finely and sauteed in 1 tbsp of oil

1/2 cup of spring onions, chopped well

Salt, black pepper, crushed garlic, basil – As per your taste preference

1 egg

1/2 cup milk

1/4 cup grated cheese

You can add other vegetables like kale, spinach and so on – all chopped and sauteed. 

Method – Mash the potatoes well and saute the cabbage and any other of the vegetables that you are using. Mix them together. Add all the seasoning and spring onions. Add the egg and whisk well. Add milk slowly and whisk to incorporate thoroughly. 

Spoon it into the baking dishes and bake at 170 degrees C for 35-40 minutes until firm. Serve hot.
